what do you turners suggest to be the best gouge grind/profile for the satisfactory finishing of the inside of bowl bottoms whilst still making a satisfactory job of the 2 end grain areas at the inside top of the bowl

I mostly use the Sorby defined Fingernail grind, and a shorter version of it I use on tighter transitions. It will depend on the shape and depth of the bowl I do when required use a scraper to finish the last cut.
End grain issues will vary on timber / moisture content, but a light touch will usually get the job done with a fingernail grind.
